On the borders of the Landes and Gers in the heart of South-West France, in a terroir of character defined by the Bas-Armagnac appellation, the Sourbès family perpetuates a characteristic polyculture combining farming and viticulture.
But certainly, it can be proud of the harvest of the latter that distils since the mid-nineteenth century in its secular cellar.
In this place, time stops. Every generation has learned from their elders to let them work. Alchemy operates naturally and inspires here the apology for slowness.
Without languishing, its oak barrels line up peacefully and seem to exchange on the theory of evolution.
Thus the ages go by to extract the quintessence a few peaceful decades later. Then comes the hour of astonishment, comparison, enthusiasm. The alcohol has stealthily evaporated, the aromas have subtly bloomed.
It is time to assemble the brandies in the respect of the product and the year of harvest.
Left to its degree of natural alcohol, each vintage is different and gives off its own characteristics: all the richness of the Bas-Armagnac of the Enclos of Simsat.
